Vegan Chamomile Sugar Cookies

There is something special about baking with tea. It feels calming, fragrant, and just a little whimsical. These vegan chamomile sugar cookies bring a subtle floral sweetness that pairs perfectly with a cup of tea or coffee. Soft, pillowy, and lightly golden on the edges, they are the kind of cookies that make you slow down and savor the moment. And the best part? They are easy to make and ready in under an hour.

Ingredients:
  • 2 Tbsp dried chamomile tea (from about 6 to 8 tea bags)
  • 1 cup vegan butter, room temperature (227g)
  • 1 cup organic cane sugar (200g)
  • ¼ cup non dairy milk (60ml)
  • 1 tsp vanilla extract
  • 2 ¼ cups all purpose flour (280g)
  • 1 tsp baking powder½ tsp baking soda
  • ¼ tsp salt

Process:
  1. Add the chamomile to a spice grinder or blender and grind until fine.
  2. In a large bowl, cream together the vegan butter and sugar until light and fluffy. Add the non dairy milk and vanilla, mixing until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground chamomile.
  4. Add the dry ingredients to the wet mixture and stir until a dough forms.
  5. Cover the bowl and chill the dough in the fridge for 30 minutes.
  6. Preheat the oven to 350°F (180°C). Line two baking sheets with parchment paper.
  7. Scoop out tablespoon sized amounts of dough, roll into balls, and place them on the prepared trays about 2 inches apart.
  8. Bake for 10 to 12 minutes until the edges are just set and lightly golden.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Personal recommendation: Sprinkle with a little extra sugar before baking for sparkle, or enjoy warm with chamomile tea for the ultimate cozy moment.
