Simple Burrito Bowl

We're a busy group of people, and you're likely run off your feet, too! This simple burrito bowl takes just 15 minutes to create and is packed with pantry basics.


30 minutes prep time | serves 4


Ingredients:

For the bowl:

  • 1 can of black beans
  • 1/2 teaspoon garlic powder
  • 2 red capsicums, diced
  • 1 tablespoon olive oil
  • 1 cup frozen corn
  • 2 cups cooked rice (brown, white or even quinoa!)
  • Salt
  • 1 avocado, sliced
  • Coriander, chopped
  • Green Goddess dressing (or one of your choice)

For seasoning:

1/2 teaspoon (each) paprika, chili powder, cumin, garlic powder
pinch red pepper flakes plus 1/4 teaspoon black pepper


Process:
  1. Simmer black beans on low in a small sauce pan for 4-5 minutes with 1/4 teaspoon of salt - stir often.
  2. In a pan heat oil on low to medium heat - add diced capsicum with 1/4 teaspoon salt - saute for 5 minutes until soft.
  3. Add frozen corn, stir and cook for another 2 minutes until corn is cooked. Then add seasonings to peppers and corn.
  4. Serve black beans, corn & peppers over cooked rice with chopped cilantro, avocado, and Dressing.

 

Personal recommendation: add some TVP for extra protein into your beans!
